ideas for cold food in noodle boxes?

I am helping out with a wedding, it is very relaxed and funds aren’t very high so we are going DIY for the food, which shouldn’t be a problem as it isn’t a sit down, its a late lunch. We want to have the food in noodle boxes as it would suit the venue (a beautiful park) and lets guests mingle while eating without having strict seating arrangements.
So far we have come up with thai beef salad, crispy noodle salad and ceaser salad. What else could we do? It must be cold and preferably able to be made the day before.

What about a fresh veggie or fruit salad? Of course, make sure it is all dry before putting it in the boxes. But like a veggie salad with cucumbers, carrots, celery, things like that. Maybe get little ranch cups to go with? Or chop up the veggies and put some sort of seasonings on it like garlic salt or something. And a fruit salad with grapes, apple pieces, banana pieces, little marshmallows, nuts, and shredded coconut in it? Of course, popcorn always goes great in boxes lol. Was going to say taco salad, but didn’t know if that would set well in the noodle box. Hope you all have fun!

Vietnamese spring rolls or california rolls, chicken wings with the tips cut off,meatballs,nice cheeses.
